LET'S TALK WAFFLES
One of my most favorite breakfasts ever is Waffles topped with Strawberries, but not the frozen kind. Of waffles, or strawberries. We have spent the past several years searching for THE recipe that would make me happy.
The Kids also like their waffles. They like theirs frozen and in the shape of Legos. Or strips. They have begrudgingly eaten our homemade waffles which tasted, "healthy" in their words.
The Kids had no idea that the waffles I made this weekend were "healthy". They both exclaimed, "These are the best waffles ever Mom!" Then they did the dishes, the laundry, cleaned their rooms, and mowed the lawn. Oh yeah, and they weeded the garden.
I joke people. About the chores, not the waffles. The waffles are that good.
The Best Waffles Ever Mom!
3/4 cup Whole Wheat Flour
1/4 cup Cornstarch
1/2 tsp. Salt
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 cup Milk (using wheat flour instead of white, I found I had to use a bit more milk than this)
3/4 cup Buttermilk
6 Tb. Vegetable Oil
1 Egg, seperated
1 Tb. Sugar
1/2 tsp. Vanilla (or more, we love vanilla, I added about 1tsp.)
the extras that I added to make it sound even healthier...
2 Tb. Whey Protein
1/4 cup ground Flax Seed
A pinch or two of Wheat Bran
Heat the waffle iron. Mix flour, cornstarch, salt, baking powder, and baking soda in a medium bowl.
Measure the Buttermilk, milk, and oil in a Pyrex measuring cup; mix in egg yolk, set aside.
In another bowl, (I know, lots of dishes to dirty, but after these waffles, your man/kids will do them for you), beat the egg white until they almost reach a soft peak. Sprinkle in the sugar and beat until the peaks are firm and glossy. Beat in the vanilla.
Pour the buttermilk mixture into the dry ingredients and whisk just until mixed. Drop the whipped egg white into the batter in dollops and gently fold in.
Cook waffles and try not to drool on waffle iron. It gets messy if you do. Just trust me on this one.



That sounds delicious! But I don't have any whey protein or flax seed? Can I still make these with a variation? They sound delicious (and you know, I JUST got a waffle iron!)
